Treat Deals: Funnel Cakes

We made these last Saturday when our family was visiting for a special treat. It made enough for 7 people +. I used olive oil to fry them because it's healthier but we only make these twice a year anyway. It's really fun and different.

FUNNEL CAKES
(Paula Deen's recipe with some modifications)
INGREDIENTS
2 cups milk
1 egg, beaten
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon baking soda
2 Tablespoons sugar
1 teaspoon cinnamon
1/2 stick melted butter
oil for frying
powdered sugar, for topping
fruit, whipped cream for topping (optional)

DIRECTIONS
1. Combine milk, egg, vanilla in a large bowl.
2. In a separate bowl, combine flour, salt, baking soda, cinnamon and sugar. Add to wet ingredients. Beat with a mixer until a smooth batter forms.
3. Fold in melted butter.
4. Pour batter into a funnel or squeeze bottle while using your index finger to stop the flow of the batter.
5. Bring the funnel over the hot oil (medium-high) and release your finger to start a stream of batter while moving the funnel in a circular motion to create spiral-like shapes.
6. Fry for 2 to 3 minutes until golden brown and slightly puffed. Sprinkle with powdered sugar and fruit and whipped cream. Serves 6-8.
