St. Patty's Day Recipes

St. Patrick's Day is Wednesday, the 17th. If you are like me, you use any excuse of a holiday to celebrate. I usually decorate for Valentines, St. Patty's Day, Easter etc. but am not up to it this year with moving, baby, etc. I still want the holiday to be fun! We might have green eggs and ham (or Lucky Charms) for breakfast. I am thinking about making a leprechaun trail/treasure hunt with a "pot of gold" at the end for Bree. I think she'd get a kick out it, the hubs is part Irish and he'd probably enjoy it too!

This year I think I am going to make potato soup because I have lots of potatoes (recipe to come, I'll make it early). Betty Crocker suggests it along with the obvious corned beef and cabbage, or Shepherd's Pie. For dessert mint chocolate brownies (just melt Andes mints over hot brownies, we made these for my sister's wedding reception=delish), leprechaun cookies, or green jello.
